Alioli and traditional recipes

Alioli is one of the most traditional sauces in Mediterranean cuisine. Today we are going to show you the recipe for three of the most typical dishes with alioli of our gastronomy. You have surely enjoyed them many times in bars.

1. Alioli potatoes (for 4 people)

Ingredients:

• 4 medium potatoes
• Chopped parsley
• Salt
• Extra virgin olive oil

Super easy recipe to make. The only secret is that the alioli is made with good quality oil and that the potatoes are just right. Make sure they are cooked through by poking them with a fork. Once cooked and dry, chop them and soak them for a few minutes in oil to give them a crispy touch.

Drain the oil on kitchen paper. Place the potatoes on a plate and cover them with the alioli sauce. Add a touch of color by sprinkling a little chopped parsley on top.

2. Sepia alioli (for 4 people)

Ingredients:

• 2 cuttlefish
• Extra virgin olive oil
• Salt
• Chopped parsley

This delicious, typically summery dish, which both children and adults alike like, can be eaten with aperitifs or as a main dish accompanied by a fresh salad. It is very easy and fast to make.

Clean and chop the cuttlefish into regular pieces of about two centimeters so that they can be easily pierced. Although they are usually sold clean, it is a good idea to make sure that the skin and mouth have been completely removed. If the cuttlefish is going to be the main dish, you can grill it whole, with some horizontal incisions so that it does not bulge.

In a pan with hot oil, place the cuttlefish extended. While it cooks, add salt and parsley. Stir until evenly browned.

Serve the cuttlefish on a plate accompanied by the alioli sauce. To lick your fingers!

3. Fideuá with alioli (for 4 people)

Delicious recipe, typical of fishermen, very easy to prepare.

Ingredients:

• 350 gr of noodles no. 2.
• 200 gr of squid or cuttlefish
• 1l of homemade fish broth
• 2 garlic
• Extra virgin olive oil
• Salt

Preparation: Fry the noodles until golden brown and reserve. Brown the sliced garlic in a little olive oil and mix with the noodles. Add the squid and cover everything with the fish stock. Cook for 5 minutes and add salt to taste. After that time, place the paella pan in a preheated oven at 250º with upper and lower heat, so that the noodles finish cooking. When they begin to straighten up and are golden brown, we remove from the oven. We serve accompanied by the aioli sauce.
