What is Jijona nougat?
Jijona nougat, also known as Xixona nougat, is a nougat which is made by ground almonds with honey. It is very popular in the province of Alicante, precisely in Jijona. In fact, it is catalogued as Designation of Origin, which is a designation in charge of meeting all the necessary requirements to reach the Protected Geographical Indication.
Jijona nougat uses the same ingredients than Alicante nougat in its elaboration, even though its recipe is slightly different. We are going to see how Jijona nougat is elaborated.
How to make soft nougat
Jijona nougat, also known as soft nougat, is different from Alicante nougat because the almonds used in its elaboration are ground. This way, soft nougat is made.
Elaboration:
The first step is: to ground the almonds. After that, pour the honey and sugar in a pan; warm it up over medium heat and stir it with a wooden spoon until the ingredients are homogeneous. Once they are homogeneous, sugar and honey should have formed a thick mixture after the process.
The next step would be to take the pan off the heat and pour the egg white, already whipped. We will stir this mixture until the lumps disappear.
Once there are not lumps in the mixture, we will add the previously ground almonds. We will put the mixture in a mould, and we will let it rest for about 5 hours until it is completely compressed.
This way soft or Jijona nougat is elaborated. It is called soft nougat because almonds are minced and ground, and not entire as in Alicante nougat.
