In my opinion you don’t need to be from Valencia to enjoy a good rice dish every once in a while. At home, in Teruel, sunday was the day of the “good” meal. Not because the other days we wouldn’t eat well but because my father made the best paellas. During the summer period our favorite was the Seafood Paella.
After all my live watching my father prepare paellas I also got quite fond of cooking them. One of the things I like most about preparing paellas is that you don’t prepare it for just one person but a nice seafood paella or any other paella has to be eaten with family or friends. If you have Spanish friends sure you heard: When do we get together to have a paella?
Everyday, and every place, is perfect to have a good paella and even a better chance to get together with friends and family. Said this, the paellas, as well as the seafood paella, are originally from Valencia and I’m very grateful for the wonderful meal they gave us. But since many years, like other typical dishes as the Spanish potato tortilla, the paellas became a national dish. They use to have some basic ingredients and they adapat depending the region you are.
Let me just cut a topic: abroad they created paella recepies in function of what the people like and in function of the availability of ingredients. Not every country has good seafood (the one that adds taste not only colour) or typical vegetables as the garrofon beans. In Spain we also use rabbit, a very much apreciated lean meat, but in other countries the rabbit is the favourite pet of many girls and boys and having it for lunch could be a very traumatic experience. Another example are the peas, a widly used ingredient for paellas in the United Kingdom or Germany and considered a sacrileg by many Spanish, including me. And if we have to point out the gulity part it is certainly not the average chef but famous chefs like Jamie Oliver or Gordon Ramsey.
