Characteristics of fried loin “de orza”
We provide a “lomo de orza” that has been chopped into large medallions and vacuum-packed with some of the sunflower oil which has been used to confit it. This product weighs 225 grams and is produced by the family-run company Qalat, located in Calamocha (Teruel). They have great experience in the preparation of typical Aragonese dishes and local cold meats.
A traditional Spanish meal that has been made for centuries is orza loin. It is referred to as a preserve since this preparation was done to keep the pork meat for a longer time.
Pork loin that has already been chopped is prepared by seasoning it with salt and sugar and confiting it at a low temperature. It is a dish that can be eaten hot or cold, and because the oil in which the loin is cooked has been enriched with the juices from the meat, it can be used in other stews and recipes.
The loin has a light brown colour, but it does not have those characteristic marks of meat when fried since it is cooked in oil at 100 degrees, where the cooking is more uniform. It has a thickness of about one centimetre. Not to mention that it comes from one of the tastiest pieces of the pig, the tenderloin, so it is a particularly juicy meat.
It has a softer texture in the mouth and can easily be sliced with a fork. Despite being a preserved product, it still has all of its juices and aromas. It has a flavour that is both tasty and powerful, making it the perfect product to eat (hot or cold) with bread. It also goes well with other foods like rice and stews. It doesn’t go unnoticed!
