Our ecological and concentrate horchata is from the brand Terra i Xufa, located in Valencia. It is the first 100% biological horchata elaborated with chufas that belongs to farms in Valencia.

Terra i Xufa have their own production of ecological tiger nut milk, just as other products such as the flour or beer. They are located in Albuixech (Valencia), this is the land of the chufas and they work reducing the food waste and maintaining the traditional knowledge of l’Horta de València.

What does it mean concentrated Horchata?

The Organic Horchata concentrate is the one that preserves all its qualities and horchata flavour. Its great difference from the fresh traditional horchata is that the concentrate horchata contains less water, that is why, it is made with low pasteurization and through a unique artisanal process.

Moreover, it is also used for bakery, specially to elaborate some cakes and sponge cakes adding all the horchata flavour but reducing the use of added sugars.

Organic Horchata Concentrate Preparation

This tiger nut concentrated milk needs a special preparation: for one litre of fresh horchata mix 200 ml of concentrate with water, mix it well, preferably shake it until the concentrate is dissolved completely and the drink has its characteristic colour. Once mixed, consume preferably within 3 days.

That is how we will obtain a fresh ecological horchata from a concentrate.
