How to use:
1. fix the ham to the ham holder by the hoof with the "contramaza" up, you should start to cut with this area because it is the first part to dry
2. when you reach the bone, turn the ham and start cutting the "maza"
3. finally you finish cutting the ham end following the bone's outline

We recommend to make thin, uniform and continous cuts.
