Peppers belong to the Solanaceae family and, although this plant comes from South America, the Piquillo de Lodosa is an ecotype of the Piquillo variety, originated in Navarra and with the Protected Designation of Origin.

Piquillo peppers qualities
Piquillo peppers are shaped like triangles, but bas they are in canning jars, their shape changes to strips, elongated and uniform. They have a bright and intense red color, and they are very versatile when it comes to complement your dishes.
One of its most outstanding characteristics is that they are peeled one by one, without being submerged in water or chemical solutions. This way, the peppers retain all their characteristics.

The elaboration process of the Piquillo Peppers from Lodosa is the following:
• The peppers are grown, and once harvested and in the factory, they are placed in a hopper with water to remove impurities from the field.
• Once cleaned, the peppers are roasted with direct flame.
• Then, one by one, they are cored, peeled and the seeds removed.
And at the end, we obtain the Piquillo Peppers from Lodosa.

Piquillo peppers from Lodosa are part of the Protected Designation of Origin, but not all of them are covered by it. If you want to know that you are buying Piquillo Peppers from Lodosa with PDO, you must consider the following characteristics
1. The logo of the Denomination must appear on its packaging.
2. As well as the back label numbered and created by the Regular Council.
3. The full name of the product must appear and include ''Lodosa'': Denominación de Origen Protegida de Piquillo de Lodosa.
